Vegetable-Burrito

Attention all burrito fans! We have the perfect recipe for you!⠀

Ingredients:⠀
1 cup rice⠀
1 cup red beans⠀
Lettuce (a few leaves)⠀
1 larger carrot⠀
1 cup corn⠀
Red Cabbage⠀
1 cucumber⠀
1/2 avocado⠀
2 tomatoes⠀
1 onion⠀
Parsley⠀
⠀
Dressing Ingredients:⠀
1/2 avocado⠀
1 cup finely chopped fresh parsley⠀
Juice of 1 squeezed lime⠀
1/3 cup olive oil⠀
salt⠀
Cumin⠀
⠀
Cook the rice according to the directions on the box, then dry and set aside to cool. Dice the tomatoes and onions, add the finely chopped parsley and mix well. Chop the remaining vegetables and serve in a deeper plate as shown in the photos.⠀

Dressing: Mash the avocado and add the other ingredients, pour over the veggies and enjoy the flavor!
